I learned almost everything I know about cooking from my parents. My mother is practical and organised in the kitchen with an incredible ability to cook for and feed a large number of people. My father loved food and I inherited his passion for cooking. He was from Puglia and loved simple food made from hearty ingredients. Above all else, he loved to cook for family and friends.
His essentials in the kitchen were: pasta, olive oil, garlic, chillies, tomatoes. All selected to complement a nice cut of meat and a good glass of wine. Together, we cooked meals for 2 or meals for 12. He remembered everyone's favourite dish. Nothing was too much effort and he was known in our local market for his early morning visits to buy fresh produce. He never lost his ability to get excited about the simplest of ingredients. He spread joy with his food, but above all, he spread joy through his love of cooking. Our kitchen was a constant source of magic. Simple ingredients transformed into the purest expression of joy: cooking for the ones you love.
